    • Filet of mackerel burnt over the flame, with a haddock and gambas nem, cucumber Tzaziki and carott and orange sorbet

    • Purple potatoe prepared in different ways, egg cooked at low temperature and wasabi ice-cream

    • Choice of dish

    • Duckling on a cêpes mushrooms risotto, crunchy parmesan biscuit and purple radish

    • Hake on a cream of french beans, samphire tempura, mushrooms and a squid ink sauce

    • Choice of dessert

    • "Bread and butter pudding" with roasted and caramelised figs, Tonka bean ice-cream

    • A selection of ewe cheeses from monsieur Marty


Menu Découverte - 45 €

Pan-fried foie gras with "death trumpets" mushrooms, black garlic from Lautrec, white beans and sweet onions jelly

Monkfish glazed with squid ink, parsnip mousseline, chorizo ice-cream, herb sauce and parsley flavoured potatoe leaf

Beef served pan-fried and as a "stew", pumpkin tempura and glazed vegetables from Viviers-Les-Montagnes

Selection of mature cheeses

(Supplement of 5 € in replacement of the dessert or 12 € while preserving the dessert)
