    • Farm-housed egg, cooked slowly, with a crunchy pastilla of black pudding and parnsnip

    • Gambas marinated with carotts, like a "raviole", avocado mousse and tumeric ice-cream

    • Filet of beef, just seared, with a veal and sweet oignons springroll, sweet potatoe mousseline, vegetables and sweet and spicy sauce

    • Fresh cod cooked in the oven, with olive oil, wild mushroom risotto and red cabbage, squid ink sauce
