Our lunch formulas

Menu Saveurs - 35 €

    • Choice of starter

    • Egg cooked at 63°c, pearl Barley risotto with mushrooms, parmesan and roquet salad

    • Gravlaax of saithe in squid ink, gambas springroll with avocado, emulsion of black garlic from Lautrec

    • Choice of dish

    • Cod cooked slowly in olive oil, mashed sweet potato, samfire and a shellfish consommé

    • Veal "à la plancha", parnsnip mousseline, polenta chips with spinach and cream of chorizo

    • Choice of dessert

    • A selection of ewe cheeses and ewe's cheese ice-cream

    • Poached pear in a rosemary sirup, strawberry jelly, hazelnut crunchy biscuit with smoky salt, pepper ice-cream


Menu Découverte - 48 €

Tataki of red tuna with a raspberry/red pepper and "piment d'Espelette" sorbet

Foie gras scallop, pan-fried with lemon caviar and mango chutney, and half-cooked with truffle from Lescout

Pigeon stuffed with cepes from the Montagne Noire, Jerusalem artichokes and Tonka bean mousseline, juice of sweet garlic

Selection of mature cheeses

(Supplement of 5 € in replacement of the dessert or 12 € while preserving the dessert)

Dark chocolate biscuit, like a "Black Forest", pistachio ice-cream and black cherry sirup
