    • Egg cooked at low temperature with lentils, black pudding in a samoza, goat's cheese ice-cream

    • Gravlaax of saithe on a spinach mousseline, "Raz El Hanout" ice-cream, crunchy salade

    • Choice of dish

    • Chicken and mushroom pie, with vegetable mousseline and glazed carotts

    • Filet of sea-bream à la plancha, sweet potatoe, "red meat" radish and chick peas, shellfish cream

    • Choice of dessert

    • Speculoos biscuit, like an apple Tatin, raspberry and almond milk sorbet

    • Selection of yew cheeses from monsieur Marty and quince paste


Menu Découverte - 45 €

Panna Cotta of duck foie gras, leaks and espuma of "death trumpets" mushrooms

Red mullet, prepared like an "escabèche", squid ink mousseline, pickled vegetables and Jerusalem artichoke crisps

Under palette of beef and veal sweetbreads, à la plancha, cream of cèpes mushrooms, green cabbage and white truffle oil

Selection of mature cheeses

(Supplement of 5 € in replacement of the dessert or 12 € while preserving the dessert)
