    • Pan-fried potatoe and goat's cheese terrine, goat's cheese ice-cream and young leaves

    • Aubergine rolls with gambas, smoked aubergine caviar and onions, sweet and sour carotts and tumeric ice-cream

    • Farmed-house veal, just seared, pumpkin mousseline, pan-fried local vegetables and sweet spices sauce

    • Cod cooked at low temperature, in olive oil, squid ink risotto, spinach and tempura of cauliflower

Confit duck marbré with foie gras, cubes of sweet and sour vegetables, foie gras mousse and beetroot

Pigeon from the Mont Royal, cooked two ways: breast glazed with truffle juice and confit leg, sweet potatoe and carotts from Olivier Estève
