    • Duckling with a corn polenta, roasted new onions and duck juice

    • Saumon cooked in olive oil at low temperature, served cold, cepes mushrooms duxelles et crunchy local vegetables

Red tuna tataki with a foie gras ice-cream and wakamé consommé

Monkfish served cold with aneth, peas and various tomatoes from the Estève brothers, chorizo ice-cream

Beef cooked "à la plancha", carotts prepared in different ways and pan-fried small potatoes

Selection of mature cheeses

(Supplement of 5 € in replacement of the dessert or 12 € while preserving the dessert)
