    • Egg cooked at low temperature, mushy peas and Pata Negra, roasted onions foam

Duck foie gras with a wine and apple jelly, caramelised onion compote

Asparagus and crab with a wasabi espuma

Veal sweetbreads, glazed, on a wild garlic mousseline, crunchy potatoe biscuit, juice of carrotts and cumin

Selection of mature cheeses

(Supplement of 5 € in replacement of the dessert or 12 € while preserving the dessert)

Light Beetroot with vanilla over a dark chocolate ganache, bitter chocolate sorbet and honeycomb
