    • Egg cooked at low temperature with pumkin and crunchy parcel of local Melsat

    • Filet of mackerel glazed, on a broccoli and sesame oil mousseline, curry ice-cream

    • Cod cooked slowly in olive oil, green cabbage with an oriental consommé

    • Farmhouse veal, pan-fried, on a corn polenta with a vegetable pappardelle and parsnip chips

Pan-fried foie gras with "death trumpets" mushrooms, black garlic from Lautrec, white beans and sweet onions jelly

Monkfish glazed with squid ink, parsnip mousseline, chorizo ice-cream, herb sauce and parsley flavoured potatoe leaf

Beef served pan-fried and as a "stew", pumpkin tempura and glazed vegetables from Viviers-Les-Montagnes
