Simon Scott's passion for cooking has led him to work in major London houses, such as the 'Ritz Hotel', as assistant chef, or the 'Savoy Hotel', a true institution, as executive chef.
Meanwhile, he spent two years in Provence, under the direction of Jean-Claude Aubertin, who introduced him to the wealth of regional products in local markets.
It was in 2001 that Simon and Marie-Hélène, his wife, left London and settled in the countryside at St Avit, near Dourgne, in an old farmhouse. Thus born the restaurant "The Flavors of St Avit".
In 2009, Simon Scott wins the Michelin star, the consecration for a passionate chef like him ... and it's 3 months later that, "The Saveurs de St Avit" gives way to "Bistrot Saveurs" in Castres, where Simon Scott and his team begin a new adventure:
At the "Bistrot Saveurs", in a contemporary and refined decor, Simon Scott wishes above all to share his passion for culinary art with his clients, hence his panoramic cuisine.
For him, cooking is a real "melting pot" of cultures, emotions and flavors, which he applies day after day to discover to his customers.
